The Interceptor’s body was designed by Italian coachbuilders. Touring cars and the early cars were built in Italy at Vignale before Jensen moved production. The original power source was a 6.3-liter Chrysler V8 that produced 325 horsepower and a top speed around 135 mph. While a manual transmission was available, most Interceptors came with an automatic Torqueflite transmission.

The MKI was sold between 1966-1969, and the Interceptor became the MKII, which saw sales between 1969-1971. Jensen introduced the MKII with power steering, power brakes and power windows.
